As I stand in the restaurant today, watching our team carefully craft each roll with the same dedication we had on our opening day, I'm overwhelmed with gratitude. Twenty years ago, we opened the doors of Raw Sushi Bistro with a simple dream: to carry on a family tradition of Japanese fine cuisine and bring exceptional sushi to our community.
The Beginning: A Dream Takes Shape
In 2005, I left my previous career behind to follow my true passion. I knew that Stockton was hungry for authentic, high-quality Japanese cuisineâa place where traditional techniques met California's innovative spirit, and where every ingredient was sourced with absolute integrity.
I remember our first day vividly. We started small, focusing entirely on perfecting the fundamentals. We had a tight-knit team, but what we lacked in size, we made up for in passion and an uncompromising standard for quality.

The Grand Opening
We opened our doors in Stockton with a simple menu, focusing on perfecting the fundamentals. Our philosophy: master the basics before attempting innovation.
Building Our Reputation
Word spread quickly through the community. Thanks to our loyal guests, we became known as the go-to destination in Stockton for fresh, high-quality sushi and our signature warm hospitality.
Expanding the Menu
We introduced many of the signature rolls that our guests love today, like the Dante's Inferno and the Reggie's Roll, perfectly blending traditional cuts with bold, modern flavor profiles.
Growing to Modesto
Driven by demand from guests traveling from out of town, we proudly opened our second location in downtown Modesto, bringing the Raw Sushi Bistro experience to a whole new community.
Adapting & Thriving
Like everyone, we faced unprecedented challenges. But our community rallied around us. We pivoted to offering premium takeout and delivery, staying connected with our guests through difficult times.
